IKEA’s New Cookbook Puts Kitchen Scraps to Good Use

In an fantastic initiative to reduce kitchen waste that often end up in landfills and promote sustainable cooking practices, IKEA Canada has collaborated with ten North American chefs on a brand new cookbook that features some delicious recipes using kitchen scraps. It has also given the cookbook an interesting name – The ScrapsBook!

So, you can now look up honey-roasted whole carrots that use carrots along with their tops, a delicious wilted smoothie that uses wilted leafy greens and herbs, and chocolate and banana peel cake, which uses banana peels that are rich in potassium, fibre, and antioxidants apart from carrying the amazing banana flavour.

The recipes, which encompass diverse cuisines, have been curated by a host of renowned chefs like Adrian Forte, Craig Wong, and Trevor Bird.

“In Canada, research tells us that almost two thirds of food scraps that end up as kitchen waste could have been eaten,” said Johanna Andren, Head of Marketing, IKEA Canada. “Seeing how much waste is created in one of the most important rooms in the home, we set out to inspire Canadians by giving food scraps another look and offering new, creative ways to reduce food waste at home.”

The eBook is available to everyone to download online at IKEA.ca/Scrapcooking and is also available on Apple Books and Google Play Books. To promote sustainable cooking, IKEA also intends to launch #Scrapcooking Sundays, a weekly series of live cooking tutorials on Instagram Live hosted by the contributing chefs.

“Food is valuable and precious. We believe that everyone in the food chain has a role to play in preventing and reducing food waste,” said Melissa Barbosa, Sustainability Manager, IKEA Canada. “By providing new solutions and drawing on the passion of our co-workers and customers, we can help tackle Canada’s food waste challenge.”
